I have such wonderful memories of eating Fantales when I was a teenager - reading the blurbs on the wrappers about movie stars. I also just happen to love chocolate and caramel - so of course I had to try and dream this recipe up!! It took ages! Lots and lots of experimenting and testing but now I think I've finally'nailed' it! :)

ThermoFun - Funtale Recipe - ThermoFun | Thermomix Recipes & Tips (2)

Ingredients

  • 90 raw sugar
  • 80g brown sugar
  • 60g butter, unsalted, cubed
  • 50g glucose syrup
  • 150g condensed milk
  • 2 x 50g milk or dark chocolate melts
  • 2 x 10g coconut oil

Instructions

  1. Line a loaf tin with baking paper and allow the paper to come up the sides.
  2. Place raw and brown sugar into TM bowl and mill 1 min / speed 10.
  3. Add butter, glucose syrup and condensed milk and cook 25 mins / Varoma / speed 2 / MC off.
  4. Pour into prepared tin and allow to set in fridge.

To clean Thermomix bowl:

  1. Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
  2. Heat milk 5 mins / 80°C / speed 4.
  3. Enjoy warm caramel milk. No wasted caramel!

Chocolate:

  1. Once caramel has set, place 50g chocolate and 10g coconut oil into TM bowl and grate 6 sec / speed 9. Scrape down and melt 4 mins / 50°C / speed 1.
  2. Pour melted chocolate on top of caramel. Place in fridge to set.
    No need to wash TM bowl.
  3. Once chocolate is set remove caramel from tin and turn it over so the other side can be covered with melted chocolate.
  4. Repeat the melting of remaining 50g chocolate and 10g coconut oil and pour on top of caramel and return it back to fridge to set.

To clean Thermomix bowl: (if not too full from caramel milk!!!)

  1. Pour a glass of milk into TM bowl and mix 5 sec / speed 8.
  2. Heat milk 5 mins / 80°C / speed 4.
  3. Enjoy warm chocolate milk. No wasted chocolate!

    YES, YES, YES,…….. This recipe is hands down, the best recipe! So easy!!!….. and it’s perfect! The “consistency” is exactly what I have been looking for. Your efforts in creating this recipe deserves a rewards. There’s no need to look any further…..

    The only thing I did, was add three drops of caramel essance, to bring out more caramel flavour.

      Lisa I use a medium sized loaf tin - measurements are: 25.5 x 13.2 x 6.5cm

    Made these the other day for my mum to take to morning tea. I did not even get to try any but had rave reviews. I was told they were "just like Fantales" & the "first thing to go." Really easy to make too. Thank you for another fantastic recipe.

    I made a double batch of these the other day (increased the cooking time by 20%) and used some chocolate moulds from KMart ($2 each). I didn't fill the moulds all the way, and topped it up with chocolate once set. After the chocolate was set, I popped them out and dipped them in chocolate. They are devine!!

      Hi Barbara - I haven't as yet doubled it - however I am quite sure it would be safe to do. Just make sure you add 20% more cooking time. I'd love to hear how it goes. :)

    SOOOOOOOOOOOOOOO amazing! My only problem was cutting! Kind of tricky still! Yum Yum Yum and so easy to make. Cannot wait to make again - might have to use the leftover Condensed milk for another batch!

      Pleased you enjoyed it Emily! Yes great way of using up leftover condensed milk too!! ;)
      To help cutting - make sure your knife is really sharp and that the funtail has been out of the fridge for around 10 mins before cutting. :)

    How long will these last? Thinking of maybe making them to put in some Christmas Hampers. Do they need to be stored in the fridge?

      Yes Kirsten I would store them in the fridge. Sorry though I really don't know how long they would last - I've made about 4 batches recently and they don't last at all....... ;)

      Nikki you could use a little bit of butter. It just makes the chocolate runnier so it's easier to work with. :)
