One of our favorite meals is this garlic marinated pork tenderloin. Its pure comfort food. Rich and hearty and absolutely perfect for a weeknight meal of a company dinner. This doe not ever disappoint!

We always try to change things up for dinner so I make pork tenderloin once a week for dinner in one form or another. I love experimenting and trying different recipes. Sometimes it’s in the crockpot. Sometimes on the grill.

I think it’s an easy dinner and we just happen to love pork. And if I can make anything easy and quick for dinner that tastes delicious and the family will eat I will.

This recipe is great because leftovers make a great wrap or sandwich the next day for lunch.

Pork Tenderloin Recipe

Pork tenderloin is one of the best meats to make for dinner in my opinion. We always have a bunch in our freezer ready to go for a quick dinner. We love pork tenderloin in the oven, slow cooker and the grill.

You really can’t go wrong any way you make the tenderloin. Your pork should taste delicious. The key to making pork tenderloin is to not over cooking it. Temperature should be 140-145 and then it will sit for about 10 to 15 minutes or so covered with aluminum foil. It will continue cooking a bit as it sits.

Pork tenderloin because it’s so lean always tastes better when marinated. Even the pork tenderloin you find that are dry rubbed at the market have more than likely been brined in salt before they add the dry rub.

How do I store leftovers?

If you should happen to have any leftovers place pork in an airtight container and keep in refrigerator for up to three days.

Can I freeze leftover pork?

Yes you can freeze leftover pork! Place leftovers in an air tight container or a freezer bag and freeze up to three months.

The Marinade

This marinade is also great on chicken, salmon and pork chops. It’s very versatile and can be used on just about anything. We used it on chicken wings a couple of weeks ago. If you like this marinade, use your imagination and use this marinade on whatever you can think of.

This is one of my favorite ways to make pork tenderloin. It is super tasty and so easy to make. The flavors from the marinade are incredible.

We are always looking for easy and quick dinners. We always have pork tenderloin stocked in our freezer. It’s so perfect on the grill, slow cooker or in the oven.

Easy enough for a week night meal and elegant enough for a company dinner. Serve along side some creamy mashed potatoes and roasted asparagus and you have a perfect company meal.

All I did was place my pork tenderloin in a zip lock bag, whisk up a quick marinade.

Instructions:

  • Combine all marinade ingredients and place the pork tenderloin in a plastic zip bag and marinate for at least 5-6 hours. I let it marinate all day.
  • Preheat oven to 400 degrees.
  • Place in the oven and cook for 30-40 minutes or until the meat has reached 160 degrees. Let rest for at least 5 minutes before slicing.
  • Pour marinade from pan over pork and serve

Ingredients

  • 1 ⁄4 cups olive oil
  • 1 ⁄3 cup soy sauce
  • 1 ⁄4 cup red wine vinegar
  • Juice of 1 lemon
  • 1 tbsp Worcestershire sauce
  • 2 tbsp fresh parsley finely chopped
  • 1 tsp dry mustard
  • 1 Tbsp fresh cracked black pepper
  • 6 cloves garlic minced
  • 1 ¼ lb pork tenderloin clean and trimmed

Instructions

  • Combine all marinade ingredients and place the pork tenderloin in a plastic zip bag and marinate for at least 5-6 hours. I let it marinate all day.
