Deliciously Glazed Vegan Gluten Free Pumpkin Bread Recipe

Have you ever tried my Gluten Free Vegan Pumpkin Bread? I shared that recipe in my very first year of blogging, and I’ve been thanking my lucky stars it wasn’t a super dodgy, but in fact, totally foolproof & reader-loved recipe, since. Phew!!

One of the biggest issues I always face when searching for a delicious vegan pumpkin bread in stores is… well: I can’t find one! Lol. The second reason: looking at the store-bought pumpkin bread’s ingredients list is not a fun exercise.

My Favorite Tools for the Best Vegan Pumpkin Bread Recipe!

Here are my favorite tools for making this pumpkin bread the BEST vegan pumpkin bread recipe ever!

  • 4-Event Timer – this kitchen tool is incredible. If you’re an avid baker like me, you’ll generally be baking several recipes all at once. But how do you keep track of it all? Bake Time, Cool Time in the pan, Cool Time on the cooling rack, Bake Time for the 2nd batch of pumpkin bread, etc. . I LOVE using this 4-event timer to keep track of overlapping “events” aka recipes. This helps me never forget to take something out of the oven while I’m prepping something else! 😉
  • Loaf Container/Cake Keeper – how cool is this perfectly shaped container for loaves? I’ve been searching far and wide for a container that’ll hold freshly baked loaves (without crushing the beautiful tops or sides). This one’s spacious and holds even the big ones!
  • 4oz Prep Bowls – like magic. I used to use the usual tiny prep bowls, but found them so annoying because they barely fit a thing! I mean… have you tried not spilling 1/4 cup + 2 tablespoons of melted coconut oil in one of those little things? So hard! These 4oz prep bowls are the perfect size & come at a fantastic price, so you’ll have plenty to use while prepping all of your yummy baked goods!
  • Organic Powdered Sugar – great for making vegan glazes and just the right touch for this glazed vegan pumpkin loaf.
  • Almond Meal – in my opinion, THE ingredient that makes this loaf! Almond meal holds the moisture in this pumpkin loaf just the right way – it keeps the bread moist, but fluffy and delicious.
  • Coconut Sugar – my favorite refined sugar-free sugar. So great for paleo, vegan, gluten free and dairy-free baking!
  • Gluten Free Vegan Pantry Staples: Coconut Oil | Pure Maple Syrup | Ground Flaxseed | Parchment Paper

Are you ready to try on all the group costumes with me? Ahem! I mean, are you ready to bake all the glazed vegan gluten free pumpkin bread loaves? Let’s do it! I simply can’t wait to hear what you think. Let me know if you try my recipe in the comments below. 🙂 ‘Til the next kitchen adventure…

Sending you all my love and maybe even a dove, xo Demeter ❤️

Description

Glazed Vegan Gluten Free Pumpkin Bread Recipe (GF): easy & moist pumpkin bread made in just 1 bowl! The BEST vegan pumpkin bread recipe—flavorful, full of warm spices, made with healthy ingredients and topped with a sweet glaze. Non-Dairy, Refined Sugar-Free.

Ingredients

Scale

Wet Ingredients

  • 1 cup 100% pure pumpkin puree
  • ¼ cup melted coconut oil
  • ¼ cup + 2 tablespoons pure maple syrup
  • ¼ cup + 2 tablespoons coconut sugar
  • 1 flax egg (1 tablespoon ground flaxseed + 3 tablespoons water, whisk together, set for 15 mins)
  • 1 teaspoon pure vanilla extract

Dry Ingredients

  • 2 cups gluten free oat flourif usinghomemade oat flour, make sure it’s very finely ground (not coarse)*
  • ½ cup almond meal
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground cloves
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon salt

Glaze

  • ¼ cup organic powdered sugar**
  • 1 ½ teaspoons unsweetened non-dairy milk (start with less, make sure it’s white and thick, not too translucent)

Instructions

  1. Preheat the oven to 350°F. Line an 8-inch loaf pan with parchment paper or greased foil. Set aside.
  2. Add the wet ingredients to a large bowl: pumpkin, coconut oil, maple syrup, sugar, flax egg, and vanilla. Whisk until well incorporated.
  3. Add the dry ingredients: oat flour, almond meal, baking soda, baking powder, cinnamon, cloves, nutmeg and salt.
  4. Whisk as long as you can—the batter will be thick. Switch to folding with a rubber spatula until no flour patches remain. Do not add additional liquids—the batter is meant to be very thick.
  5. Transfer batter into the prepared loaf pan. Using a clean rubber spatula, smooth batter into an even layer, with a gentle rise down the center—mimicking the shape of a perfect loaf. It is important to follow this step for the perfect loaf shape, as the batter will bake up very close to how it looks raw.
  6. Using a butter knife, cut a slit down the center (or off center, based on your preference). Bake for 55-65 minutes. Mine took 60 minutes. Test for doneness by sticking a toothpick into the center of the loaf. The toothpick will come out clean when the loaf is done.
  7. Allow to cool on a cooling rack for 1 hour. Then, lift out of pan, transferring loaf along with parchment paper directly onto the cooling rack.
  8. In a small bowl, whisk together Glaze ingredients until thickened: powdered sugar and non-dairy milk. Drizzle loaf. Allow to finish cooling for 1-2 hours. Slice loaf into 12 slices. Enjoy! Store in a container such as this loaf container.

FAQs

What happens if you put too much pumpkin in pumpkin bread? ›

You might think you could overcome the lack of flavor by adding more pumpkin purée to your recipe, but you'd be mistaken: By the time you've added enough purée to taste it, your baked good would have a soggy texture on account of all that moisture.

Why is my pumpkin bread not moist? ›

Try cutting the amount of flour, or adding more milk. It's also possible your oven was too hot, or you baked the pumpkin bread for too long. Try reducing the oven temperature and cutting the baking time.

Why did my pumpkin bread come out gummy? ›

If your pumpkin spice bread is gummy or undercooked in the center, it's typically because it either 1) needed more time to bake in the oven or 2) the batter was too wet, which led the bread to collapse in on itself a bit (this happens if you measure ingredients by volume, rather than by weight: it's easy to ...

Why does my pumpkin bread not cook in the middle? ›

The oven temperature is off: Usually it's running too hot, and the outside looks brown before the center is baked through. But a low oven temperature can fool you too– you think you've baked long enough, but it's actually running 50 degrees too cool.

What happens if you don't put baking soda in pumpkin bread? ›

Baking soda is a leavening agent. It creates air bubbles (technically, carbon dioxide) in your batter, when heated. Without it, your baked goods will not rise to the desired levels and the airy texture you're looking for will be adversely affected.

What happens if you use too much baking soda in pumpkin bread? ›

Bitter Taste: Excessive baking soda can leave a bitter taste in the bread. Baking soda is alkaline, and an excessive amount of it can result in an unpleasant flavor. Unpleasant Texture: Too much baking soda can lead to a coarse and crumbly texture in the bread.

Why is my pumpkin bread so heavy? ›

Pumpkin bread can become dense if there is not enough hydration or wet ingredients in the recipe. Another cause is overcooking the bread which can cause it to dry out. Remember, it's always easy to keep cooking if it isn't done but impossible to take cooking time back.

How do you know when pumpkin bread is done baking? ›

So, to know when pumpkin bread is done, look for the crack on the top of the bread, which is a tell-tale sign it's either done or close to being done. Then stick a skewer or toothpick into the center of the bread. If it comes out clean, it's ready to come out of the oven.

What can I add to bread to make it moist? ›

Finally, if you're feeling adventurous, why not add honey, molasses, or brown sugar to your recipe? Not only will they give your bread a unique flavor, but they'll also help keep it soft and moist for days.

Why is my gluten free bread gummy? ›

The simple reason is that gluten free bread takes much longer than a regular loaf to bake and therefore a sticky crumb is generally the result of under baking (there could be other reasons but this is the first place to start troubleshooting).

How do you fix undercooked pumpkin bread overnight? ›

In most situations, an undercooked loaf of bread can be fixed by returning it to the oven for a few more minutes. This is true for loaves where the outside of your bread may look fully set, but the inside of the bread is still gummy. Place the loaf back in a preheated oven at 350° F for 10-20 minutes.

Why is my pumpkin bread bitter? ›

Over-Baking: Baking bread for too long or at too high a temperature can cause the crust to become overly browned and bitter.

How long does it take to bake bread at 350? ›

Preheat the oven to 350 F. Bake bread for about 30-33 minutes, or until golden brown on top. Give the top of a loaf a gentle tap; it should sound hollow. Invert the baked loaves onto a wire cooling rack.

Why does my homemade bread have a hole in the middle? ›

Any holes present should be attributable to steam leavening. The holes will have occurred during the baking process as a result of steam build up due to the water content of the mixture.

Why is my homemade bread still doughy? ›

If the bread is kept in its baking pan, it will become soggy and look and taste doughy. If the bread has not finished baking by the maximum time indicated in the recipe, the oven thermostat may be off. Oven thermostats can vary over time, requiring adjustments by the baker or calibration by a professional.

What are the side effects of too much pumpkin? ›

When taken by mouth: Pumpkin is likely safe when eaten in foods. It is possibly safe to take pumpkin seed or pumpkin seed oil in medicinal amounts. Side effects from pumpkin products are rare, but might include stomach discomfort, diarrhea, and nausea.

How does pumpkin affect baking? ›

Not only does pumpkin purée act as a sweetener, a creamy moisturizer, and a fat substitute in everything from muffins to soup — but it also tastes delicious in everything! But because canned pumpkin is unlike any other baking ingredient, it tends to be mistreated in recipes.

Is there such thing as too much pumpkin? ›

Pumpkin is very healthy and considered safe for most. However, some people may experience allergies after eating pumpkin (32). It's also considered mildly diuretic, which means eating a lot of pumpkin may induce a “water pill”-like reaction, increasing the amount of water and salt your body expels through urine (33).

Is too much pumpkin pie spice bad for you? ›

Pumpkin spice is not bad for you. What's bad for you is the sugar found in most pumpkin spice flavored products. What is a pumpkin pie spice substitute? Make your own pumpkin spice blend using any or all of the following: cinnamon, nutmeg, ground ginger, allspice, cloves, or cardamon.
